5th July 2020

Not so lazy Sunday.
We decided to do a full day of veggie. 
Started the day with vegan sausages from Waitrose with mushrooms, cream cheese on toast, spinach and poached eggs.
Very filling and the "sausages" were lovely. Please note my new "yoga fox" mug!!


We did a few more house chores before taking a walk into town, lots of steps onto the Fitbit!
Didnt feel hungry enough for lunch so added a few more bits to dinner instead.
Massive salad with 2 Quorn Emmental Escalopes and I opted for some potato crunchies, usually reserved for The Hubby; they were ok but I wouldnt choose to eat them again.


My salt was high today due to the dill pickles in garlic and the jalapenos I put on my salad, also the processed Quorn and crunchies were high, nearly 4g for them alone!!
Still it was the end of the week and overall I didnt go over the salt limit too much.

4th July

Two days with The Hubby..... very productive and busy first day!
For breakfast we had wholemeal pitta, cream cheese with two poached eggs and some nuts.

 

Lunch was tomato soup (Hubby had the chicken, chorizo & rice version) with lots of fruit, yogurt and an Alpen cereal bar.



Dinner was Bacon & Prawn "melt" - this is SO easy and cheap! We added salmon fillets that were hanging out in the fridge looking to be eaten!


High salt today as we found Wakame salad when out today, basically a wet seaweed; its totally lovely, has some real gut positive benefits, we had this as a snack posting shopping, before snoozing on the sofa!

3rd July

Another rainy July Day!!
Spent time with a friend having socially distanced coffee today; nice to be normal!!

Breakfast was scrambled egg on toast with jalapeno cream cheese.



I missed lunch due to coffee date but was not hungry so tried out my new batch of nuts to snack on.
Nuts have so many benefits, yes they are high in calories and seemingly high in fats but they are good fats (more to come in Thoughts & Opinions) and have some excellent cardiac benefits.

Dinner was the plant based burgers we got from CostCo, Hubby loved them, I cooked them, so I could see the huge amount of oil that came out of them, so much I was able to use it to fry his parathas in!!
Yes they were tasty! expensive, but worthy.  I made onion bhajis and chutney to go with them (chutney is on the burgers in the picture)



I am under my calories today, but you will notice my fat is high (the burgers mostly - 38g!) but as with all stats I try to even them out over the week, not just focusing on each day.

2nd July

Another rainy day, but surprise I took an umbrella with me! 


Breakfast was amazing; smoked salmon on wholemeal pitta with salmon cream cheese and scrambled egg!!  felt like a guilty pleasure.


Lunch was a tuna/crab salad, mixed berries in 0% greek yogurt and I swapped the tangerine for some almonds, mostly because I was feeling full. 


Dinner I had been marinating for 36hrs, Char Sui Pork and it got a double thumbs up from The Hubby 😀 served with shredded stir fry veg (he also got noodles)

1st July

Post night shifts, so a bit all over the place with my sleep still.  1st July and it rained most of the day! Lovely British weather, but it fuffed up my walking.... I love my treadmill, but I love walking out doors more - birds, sounds, saving snails!!

Breakfast was pilchards on wholemeal pitta with cherries and almonds.  Doesnt look very appealing but it was very tasty, and full of Omega 3 & monounsaturated oils; good for cardiac health.



Lunch was soup, ham and boiled eggs with 1/2 a vanilla 0% greek yogurt with blackberries and a tangerine. 


Dinner was supposed to be a salmon salad but I burnt the skin by mistake 😭 so I opted for grilled chicken instead!  I do love the way the hot chicken "melts" the salad.
