30th June

Work tonight, so brunch was scrambled eggs on wholemeal pitta with some ham. Greek 0% yogurt mixed with a TruBlend flavoured yogurt with berries. Filling before my walk and then afternoon snooze.


Dinner was my favourite go to of grilled chicken with spinach,  tomato soup with fruit and an Alpen bar.


Temptations at work tonight 😭  
and NO I didn't have any, but it was hard.

29th June

Work tonight. Felt very low in mood today when I work up which really affected my walking, basically I didnt do any 😟 
So I called this my "rest day" as not had one this week. As of last night my step count was 90,557 for the Sunday to Sunday - so a day off is not detrimental!!

Meals today were split into two.
Lunch was Wholemeal pitta with cream cheese, eggs, ham with 1/2 a yogurt (not had one from the start of all this, but this was low in fat and sugar) some cherries and an Alpen bar (high in sugar but also fibre)



Dinner was grilled chicken and spinach, with tomato soup, Hovis, cream cheese and some fruit. I added a boiled egg (again) as I had lots of calories left to use (I dont want to be dropping too many cals with so much weight still to lose) and wanted added protein not carbs - will need to consider other proteins....

Second day spent with The Hubby.... lots achieved, so busy little bunnies!!

Breakfast was scrambled eggs on Hovis (fab fibre) plain but filling.


Lunch was a chicken salad with tomato soup and fruit for afters, whilst Hubby enjoyed some sushi and a Maple/Pecan YumYum!!


Dinner was a roast, although I didnt really enjoy it, normally I would of had a zillion roast spuds (too much fat and spuds!) and beef (I chose lower fat chicken) and lots of gravy and yorkshire puddings - they were all missing.... but I was satisfied.

Finally had a whole day with The Hubby, neither of us at work or prepping to go to work...... lovely.

For breakfast we had egg on toast with some ham slices.


This set us up for our epic day of shopping and walking!!   We mooched home for lunch and enjoyed a chicken salad with tomato & BNS soup with some fruit.



Dinner was a new meal - "prawn & cabbage melt"!!  Well it was my own version of an online picture I had spied!
Altered to be more healthy!
Savoy cabbage, broccoli, leeks, herb stock pot, some lean bacon, peppers and prawns thrown in on the top..... a hit with everyone!!
It was  quick, easy, cheap and very tasty.

What a hot, sticky and uncomfy night and sadly that didnt include "exercise" with The Hubby 😂
Ended up awake at 4am unable to get back to sleep..... so I went for a walk! and prepped all the dinner for the next three days, and made soup!!  go me on being productive!



I held out on eating for my normal 11.30ish time tho' ; which I was quite pleased with.
I had a slice of Hovis Fab Fibre with cream cheese, ham, boiled egg and an apple. I also put a FibreOne cake bar on the plate, mostly has I had excess calories and lack of fibre today..... I found it over sweet, sticky and I didnt enjoy eating it..... go my tastebuds!



Lunch was grilled chicken salad with berries to finish.



Dinner was pre-prepped so easy to throw in the pan and fry off.....  SpagBol (mine had no Spag!) 
This was a huge bowl and I only managed half, not that it wasnt yummy and my face/eyes wanted to eat it.... my tummy just said no!

Normal routine returned today 😊

Breakfast was a slice of Hovis Fab Fibre with cream cheese, ham and a sliced boiled egg. Finished with raspberries, blackberries and cherries.  This certainly is filling and very satisfying.  Previously I would have not had the fruit, but had 2 slices (minimum) of toast and slathered in butter! 😧


Hubby was home for lunch 💖 and last night we watched a documentary on Netflix about a plant based diet, so he was keen to try something new..... so I broke out the fake tuna and jackfruit!!


I didnt have all that!! I tasted a mouthful of both the "Tuno" and Jackfruit (not overly impressed with either, but the plain Jackfruit might be ok in a stirfry or curry..... something to trial at a later date.

This was my lunch, tuna wraps with fruit.


my wraps as always are little gem lettuce leaves!



Don't be fooled I don't shop posh at Waitrose, its just at the bottom of my road and a quick walk to pick up fresh veggies etc!

Today the temperature hit 32c, a little on the warm side! So I put the SpagBol aside and we settled on Salmon salad with BNS wedges....


Under on my calories today, but they may even out over the week.

Post second shift, on/off sleeping so felt a bit off colour most of the day.

Tried the "two meals a day" split, cant really do it on a non work day; I really struggled with eating all of lunch (I couldnt manage the tangerine) and then dinner was a let down.....

Lunch was a wholemeal pitta with cream cheese and sliced boiled egg, tomato/BNS mix soup, chicken thighs and spinach with some grapes and an unmanageable tangerine!


Dinner felt a long time coming today, was also lots of faff and prepping for a very disappointing taste IMO.
"Shredded crispy chicken" was a damp squip!
the spaghetti squash was just mush and the spicy sauce was a bit too sour for my tastes and not enough chilli.
So I wont be bothering to tweak this one, as no redeeming qualities for me at all.



The spaghetti squash took a long time to bake and then was not really "pasta" like and very wet and bland.   Lots of receipes call for use of salt, butter and cheese - but then whats the point of it being a healthy pasta alternative! may as well eat cardboard strings!


I will be trying Zoodles (zucchini/courgette) and Boodles (BNS) in the future though as I still have my gadget to try out!

Second shift back at work tonight. Managed the intermittent fasting with no issue. 
Apart from being completely confused at work I was ok!



Drove my car to work and walked home, so that really boosted my step count/fitbit for the day 😊

Split my meals into two again, may consider this as  an ongoing plan as it was quite nice to have larger meals. 

So lunch was Sardines in tomato sauce with mixed salad and some fruit.  Post walk was lovely, setting me up for a nice snooze in the afternoon ready for shift number 2.



Dinner was Tomato/BNS soup (half n half mixed!) with wholemeal pitta and jalapeno cream cheese, grilled chicken thighs with mixed baby leaf salad followed by more berries.
I choose to have mixed berries as they tend to be higher in fibre than most citrus fruits, plus you get a bigger variety; and supposedly the darker the fruit (like veggies) the more micronutrients.

Went back to work today, was a bit daunting and I spent alot of the day just planning, stressing about it and generally getting in a tizwas!!

First thing I did was drive my car to work and walk home, so that I could drive home, I was leaving at 2am, but I still wanted to get that big walk in - which I achieved, so good start to the day in that respect.


Next was the food planning. I split my meals into two so that I could eat before work and maintain my plan of not eating through the night like I used to and to continue the intermittent fasting that I am currently achieving. 

My first meal was lunch followed by a walk,  chores and then bed for a pre work snooze.
I had a slice of Hovis Fab Fibre with cream cheese, home made Scotch egg, "fried" eggs and spinach, followed by an apple. Bit messy looking but tasted lovely.


Pre work dinner was Chicken, Chorizo & rice soup with wilted spinach and grilled chicken thighs - really fills me up and is packed with protein, with limited fat content.   A side plate of fruit finished me off! 



Work was not as horrific as I was expecting, but I had no Scooby what was going on! 
However I did have to endure my colleagues eating pizza, cheese topped jacket spuds and chips!  


I was an angel of course! no, I really was!

Week 7


21st June 2020 Food Diary

Another weird day!!
Breakfast was sardines on wholemeal pitta with a fruit platter.... yum yum



Dinner was the yummy Fajitas, I had mine on a bed of mixed salad leaves.  I dont miss wraps at all now.



Now, to the weird part of the day, The Hubby and I were fooling around tickling each other (too much)  on the sofa when the poor fella elbowed me in the face..... queue a sudden crime scene as he accidentally elbowed me in the face and my nose exploded!
So now I look like a raccoon more than a fox and The Hubby feels dreadful - so of course Im milking it for all I can! foot rub city 😏



Hence why no lunch today and again my stats are a little screwy for the day. 
Oh well, may have some more fruit later.

Not sure what happened today, managed a fast for 16hrs, unintentional but at least I know I can do it ready for return to work on Monday night.

I had a huge lunch of Hovis (fab fibre) with Jalapeno cream cheese, some chicken and BNS soup.

In the evening I was feeling a little under the weather so opted for a fruit platter.

Totally forgot to take photos today too..... think my brain left my head today!

Benefits of Lemon Water - supposedly!

I started today with a hot lemon water, something new and surprisingly nice. Please see my other post regards to "benefits of lemon water". 


Todays breakfast was (homemade) Scotch Eggs with spinach and poached eggs.




Lunch was the favourite Tomato Soup with chicken thighs and a tangerine.



For dinner I trialed making some "Spanish tortilla" - they seemed to come out ok, but more tweaking for flavour is needed. 
We had them with Gammon steaks and salad - enjoyed by The Hubby.

18th June 2020 Food Diary

So breakfast today was pretty much a repeat of yesterday, a bit lazy and naughty on my part as I try to vary each meal/day to get a variety of nutrients.
2x Hovis with eggs & ham.

This is the jalapeno cream cheese that I currently in love with; its NOT low fat, so I will experiment with making my own version when the tub runs out!

By the way, in the mornings Im currently taking several medications and supplements, and they carry calories and carbs; yes I count them! hence why sometimes my stats look high when I havent eaten all that much! plus I count my milk in coffees too!
These are my Apple Cider Vinegar gummies, supposed to help aid your liver, digestion and suppress appetite. Im taking for the first two - my appetite is in my head!

Lunch was left over salad bits from last night and some poor little pepper and spring onion found at the bottom of the fridge, with some very tasty (but high carb & salt) roll mop herrings, worth every bit!


I had cherries and raspberries as an afternoon snack, but shamefully I didnt walk much today, that TotM so feeling achey, low in mood and it rained super hard just to add to my mood 😿


Dinner I made yesterday, thankfully, and it was amazing! an adapted Mousakka, not nearly the amount of cheese etc but still got a big thumbs up from everybody! ("how to" follow!)

Over on my cals/fat/salt today, but over the week that will even out.

17th June 2020 Food Diary

Today was a bit topsy-turvy! I had my lunch for breakfast, met my friends in the park for coffee and then came home and had breakfast!
So lots of walking was done too 😇

"Lunch" was my new Chicken, Chorizo & Rice soup with a slice of Hovis (extra fibre brand) with jalapeno cream cheese (light).


Breakfast post my coffee in the park was wholemeal pitta with more jalapeno soft cheese (it was yummy!) with 2x poached eggs and some posh (lower salt!) ham, cherries on the side!



Dinner was a very satisfying Burger in a Bowl (how to make in the files)

16th June 2020 Food Diary

Fairly waffle filled post today!
Mostly because it was a really good day!

Started well with a much longer walk of the woof 🐕 I managed the Hill of Doom; its just a steep incline really, but I have so far avoided it! so go me 😺

I came home, did the house hold chores and then enjoyed a treat like breakfast of Bacon Scrambled Eggs.... I used egg whites again to give volume and remove some of the sat fat content.


Post eating I took a walk with my back pack down to my local supermarket for some veggies, so I was pleased to vary my walk and make it useful. Something to consider in the future.

Once home and unpacked I took some "me" time and finished a book I had been enjoying before Covid & T2DM knocked my socks off, it was satisfying to restart reading again.

Then I warmed up my Tomato Soup and peeled my fruit for lunch. nom nom


Now instead of going for another walk I decided to try something new - YOGA!!
20mins of beginners yoga on YouTube had me basically squirming around on the floor in my underwear intermittently wondering if I actually had "sit bones", looking at my belly and thinking how do I reach my feet with THAT in the way, yelling at the cat to "get out of the way, Im coming down!" and questioning what a Downward Dog was without giggling so much I wet myself!


So after all those antics during the day I was definitely ready for dinner, which was thoroughly yummy!
Frazzle (yes the crisps!) coated chicken thighs, with spicy swede/carrot mash and savoy cabbage.  I was totally stuffed after!



To round the day off I was adding my exercise fun into my cal counter app and was amused to find this...... not sure if it was the "exercise" or the length of times that made me giggle....... Love you Skippy!!
