Last night shift for a few days completed! looking forward to some days off to get back into walking lots! have actually missed it, work is work but I have missed walking and food prep!!

Speaking of which I did tons of today! I realised I am measuring out my chicken each day and this gets a little laborious and I have caught myself guestimating a couple of times!
So today when I bought my chicken I literally spent a couple of hours weighing, spicing, boxing and freezing my individual portions like I do with my soups.... so when work arrives again I will be mega ready!!

Post getting home from work I had a "treat" breakfast and headed to bed, slept like a log and missed lunch!!


Dinner was a throw together of some random beef left in the fridge - beef curry; using flank/stewing steak, chopped tomatoes and some spices!
It was yum, but looked awful   ðŸ˜•


Noticed today that I dont show my sugar macros; so here I go...

Marched home post night shift, felt like a long walk!
Enjoyed mackerel on pitta with berries and greek 0% yogurt for breakfast before slopping off to bed. 

Dinner was my usual grilled chicken with warm lettuce, some grapes and huge cherries with mixed nuts. Saved my Alpen bar for later with my work snack (egg salad and Alpen bar)

Post night shift, walked home and then had breakfast with Hubby before walking and bed.

Breakfast was 2 slices of Hovis Fab Fibre, triangle cheese, poached eggs and ham.

Pre work dinner was grilled chicken with warm lettuce, in a cajun spice!! chicken, chorizo & rice (homemade) soup, cherries and berries with greek 0% fat yogurt.

Post night shift, breakfast was 2 slices of Hovis Fab Fibre with triangle cheese, ham and hard boiled eggs.


Lunch sort of passed me by as I was asleep. So dinner was chicken & veg stir fry with a store bought sauce, cals seemed ok, but salt was a little higher than I would of made.  I tried BNS noodles aka Boodles! they were ok, I would not try to make myself as far too fiddly! but they were a nice bulk out to the stir fry.

Getting ready for work (again!)
Brunch was Marmite and cheese triangles on Hovis Fab Fibre.


Dinner was grilled chicken with warm lettuce (I had run out of spinach!) now that sounds disgusting but actually it really melted well but still had a crunch, and was rather yummy, so may have this "mistake" again! Had this with tomato soup (the black blob is pepper!), mixed nuts, cherries and an Alpen bar.

So today marks 3 months since diagnosis!

And my life has changed SO much! diet, exercise, outlook.....
I have lost weight, obviously! Lost inches! and lost my cravings for certain food groups too!!



We decided to go out for dinner to celebrate, and to have a break from cooking and life generally!  plus I really did want to test my resolve a little!


So off we all went to Miller & Carter steak place!

We only had a main meal; normally I would of had a starter, plus some of the Hubbys, a main, sides AND a pudding....


I opted for my favourite (sadly most expensive) steak a Fillet 8oz, this comes with a dipping sauce,  lettuce "wedge" and dressing, an onion rosti & chips (or sweet potato chips).

My steak, spinach garnish, onion rosti and I opted for the sweet potato chips.

It was all thoroughly lovely and I was totally stuffed afterwards.

I forgot to mention that I had planned what I was going to have a few days before, so I was able to factor all the calories in and choose a good brunch.   Which was poached eggs and ham on toast.  Knowing I was going out for dinner made feeling a bit hungry in the afternoon well worth it.


So a great night, following a good week...... onwards and downwards!!

Post night shifts, so breakfast and bed.
Breakfast was sardines on wholemeal pitta, took a photo but my phone didnt save 😕

Lunch was left over fajita sauce with a mixed salad.



Dinner was Prawn & Cabbage "melt".... this is SO easy and super yummy!
lots of green stuff today!



Calories under today, mostly because I slept for a long period, and I also only had the meals, no nuts or fruits alongside.

Post night shift Brunch was vegan sausages (burnt them! so ended up with ham slices!), poached eggs on Hovis Fab Fibre with cheese triangles.


Pre work dinner was grilled chicken with spinach, tomato soup, an Alpen bar, mixed nuts and cherries.


Normal 4am snack box is ready, boiled egg with raw spinach and an Alpen bar.

Felt massively tired when I got up to make Hubbys breakfast, after he went to work I slopped off back to bed, expecting a snooze - woke up at 5pm! just in time to get ready for work!

So I missed brunch completely!

Got my work snack of boiled eggs with spinach and an Alpen bar for about 5am 😇

Had the real munchies today....
Breakfast was poached eggs on toast with laughing cow cheese.


Lunch was a mussel salad, with seaweed, I also used up the Thousand Island dressing I made up from last nights dinner; plus nuts/grapes for after.


Dinner was fajitas.... and somewhere through the day I had some slices of ham  😒


So salt and carbs were elevated today.... but its the week balance Im looking at.

Since upping my daily cal allowance I find I am struggling, Im sure that wont last!

Breakfast was homemade Scotch egg with a slice of Hovis Fab Fibre and laughing cow cheese triangles, with some grapes.  I used some sriracha sauce too as was feeling the need for spice!



Lunch sort of passed me by so at around 4pm I had some nuts, an Alpen bar and some cherries.


Dinner was everybodys favourite! Burger in a Bowl.



To bump up my cals and knowing I will be peckish later I have bought some Muller Light Mini yogurts to try, 0% fat and no added sugar, will trial with some raspberries later - I have added this to my totals, but no photo as not yet had!

I am still aiming not to eat past 10pm.

On a full night (12.5hrs) so I have brought a little 4am snack, in case I get hungry, I dont want to make bad choices.

It was too hot at lunch time to eat, I ended up having some slices of ham and a fig!

Dinner was the now perfected Char Sui pork tenderloin with roasted veggies and pak choi.

Bit of a rough night, kept dreaming about food, even came downstairs at one point and kept looking in the fridge!! shamefully I even sniffed a few foods!  But ultimately I was 😇 but it was harsh.

Breakfast was sardines in tomato sauce on wholemeal pitta.


Walked into town again, did some window shopping and managed to rack up 9k steps!!
Lunch was grilled chicken salad with wakame salad, an Alpen bar and some raspberries.


Dinner was another salad (yes im loving them!) with Teriyaki salmon, roasted BNS and some dill pickle.
I use a home marinade so I can limit the salt content and I think I have now perfected the ingredients 😀😊 it looks charred but thats the marinade caramelising.
