Last weekend day with The Hubby for awhile as shift pattern at work returns to normality.
Breakfast was late and lazy; hard boiled eggs on wholemeal pitta with jalapeno cream cheese.
Hubby had a fried eggy bread sandwich with melted cheese and ham AND a ham/cheese wrap!
We walked into town and strolled around for over 10k steps! go us 😇
Lunch was a bit haphazard again; some wafer thin ham, wakame (seaweed) salad, an Alpen bar and some dried mango. (no pix as eaten out of the fridge mostly 😕)
Dinner was tandoori spice coated chicken salad, it was enormous and filling, Hubby had his usual paratha bread with his.
All lower than average figures today, but I feel full and know I can have some fruit or nuts later if I need to.

Lazy weekend with The Hubby. Day started well with scrambled egg and smoked salmon on Hovis Fab Fibre.
Lunch was fairly light considering such a rich breakfast. Tomato soup with an Alpen bar and mixed nuts; pecans, brazils and macadamias.

Last night shift of the week tonight. Didnt manage any walking today, bit melancholy and unmotivated in mood.
Brunch was wholemeal pitta with jalapeno cream cheese, hard boiled eggs, ham and 0% greek yogurt with berries.
Dinner was grilled chicken with spinach, an Alpen bar, tomato soup and mixed nuts.

Good day today, lots of walking, yummy food.
Breakfast was 2 slices of Hovis fab fibre with jalapeno cream cheese (now home made! so more spicy) with boiled eggs and ham.
simple, filling and tasty.
Lunch was a bit of a weird combination but I had leftovers to finish off and was really fancying some seaweed and pickles!! So the Heck! chicken sausages, seaweed salad, dill pickles in garlic, nuts and raspberries.
Dinner was Chicken & Pepper curry, Im so used to not having the rice anymore, I just add spinach to my portion!
Salt was high today; pickles, seaweed, the macadamias have salt on them and the sauce for the curry has soy sauce in it.

Slept in today, post night shift.
For breakfast I had mackerel on wholemeal pitta. It was in a spicy BBQ sauce, which I wasnt a great fan off.
Somehow I forgot to eat lunch, I was concentrating on car/house insurance!
So dinner was "Sizzle" Beef.... easy and fairly cheap.
well under my calories today, may have some nuts later, or may just enjoy a few more tomo'

Onion Bhajis
This makes 12 little ones or 3 very larges ones!
Ingredients:
200g Red Onions
200g White/Brown Onions
30g of minced Garlic/Ginger
2 teaspoons of Tumeric
120g drained ChickPeas
40g Carrots
Medium whole egg
2 teaspoons of chilli powder/flakes
ToDo:
Shred the onions - I use a mandolin to get really thin slices - on a low heat fry off til they are soft, add the grated carrot.
Add the spices - stir and leave to sweat for 5-6mins
Remove from the heat
Blend the drained chickpeas with the egg til a paste consistency - add to the onion mixture
Divide mixture into sizes/shapes required - 3/6/12
Lightly spray a muffin pan with oil and bake for 30-40 mins at 200C
Dont make into perfect balls, leave some rough edges for crispy bits!!
