5 June 2020 Food Diary

Did all my walking the wrong way around today! ie pre food not post ๐Ÿ˜ฃ
oh well, at least I felt well enough to do so!

Breakfast was boiled egg on wholemeal pitta.
Also had late lunch today, felt hungry.



I tried the Thin Bagels as a change to the pitta bread - very nice! had with drained tuna, greek yogurt and spring onion. Added a tangerine on the side. I did struggle to eat the third slice, so eyes bigger than my belly still!!







Dinner was adapted SpagBol - always a firm favourite in this house, just added more mushrooms, less mince and used a low fat/salt Dolmio I had hanging around in the larder.  I opted for extra spinach instead of pasta. 

Fruit platter still to look forward too.

4 June 2020 Food Diary

Good fasting time today, 10pm til 2pm.... 
It felt ok, I was ready to eat by then though!

Late lunch was sardines on toasted wholemeal pitta with some chopped lettuce for texture.

Dinner: now this is what I was waiting for.... we planned a seafood platter......
all measured, counted and fully enjoyed!



Now some of it was just The Hubbys.... but I enjoyed prawns, smoked salmon, home made Marie sauce, ricotta stuffed pepperdews (only 1), stir fry mangetout/pak choi & Tortilla.
Next time I will make my own tortilla, it was very high with calories mostly due to the potato content, plus the added salt ๐Ÿ˜–


Fruit platter to finish the day.... also green tea, lots of differing flavours available now and they have various "health benefits"!!

3 June 2020 Food Diary

Reasonable day ๐Ÿ˜Šfelt fully in control of food, almost had a slip up due to a stressful moment in the afternoon, but batted that thought out of the park and had something healthy, and I felt SO good after!



Finally had some bacon, real bacon!  For breakfast I had two medallions (thats the centre piece with all the fat cut off) grilled, with scrambled egg and ....... dun dun daaaaaah.... some sun dried tomatoes!! yes yes I choose to eat them!!


Dinner was Kung Pao chicken, I opted for spinach whilst the men had noodles. Dont feel like I missed out, but still some adjusting to do on the ingredients to get the taste correct.



Was too tired to eat my fruit platter tonight, but then I had a snack in the afternoon of sardines on pitta whilst I waited for The Hubby to come home.

2 June 2020 Food Diary

Much more "with it" today!
Am noticing that I am doing this fasting malarky, without even thinking about it, so now Im going too and be consistant with it. So far Im fasting between 10pm and midday - 14hrs.


Brunch

Brunch today was sardines in tomato sauce on wholemeal pitta and spinach with figs and apple on the side.


Dinner

Dinner was a new dish; stroganoff with veggie cubes..... we all decided that the beef was not needed, more mushrooms instead - so our first veggie dinner in the future!!

Zero energy today ๐Ÿ˜•
I even got up super early to try and be productive, I think it backfired on me as I was just knackered and luck lustre all day.

Breakfast

Avacado with cayenne pepper on wilted spinach with scrambled eggs and wholemeal pitta.
Lunch was left over salad bulked out with chicken thighs and spinach, with a couple of tangerines. 


Dinner

Prawn, BNS & spinach curry with Cauli'Rice.   It was yummy and easy enough, but I was too tired to each much of it, so its gone into the freezer as leftovers.

CauliRice

So this yummy "side" dish can be a basis for a meal or the side - cauliflower is versatile, cheap, easy to cook and takes up any flavour you wish to add to it.

Like all things from scratch, it takes time to prepare, but IMO its worth it, knowing you are not eating a load of chemically washed/mass produced/artificial crud.


So these are the main ingredients, but you can vary them to suit your own tastes and whats in your veg box/fridge!
Obviously the main event is the whole cauliflower!

Of course, you can just make completely cauliflower based "rice" but i like to add texture, flavour and colour with the other veg. 



You will need to chop whatever ever veg you choose into "rice" sized pieces, try to make as uniform as possible, this helps with the texture.
This is the time consuming part, but dont get too stressed about it, its YOUR "rice"!!
The more you practice, you will find the right sizing for your tastes.



Once its all chopped, I add a stock cube (in its packet form ie dont add any water!)
I like to use the Knorr ones, they come in like a jelly form, packed full of flavour and they melt really well into dishes with not much juice.

Add the pot and then mix it all together, you can season at this point if you wish, I dont use added salt in anything......

Once this is done you need to microwave it for roughly 20mins or until they are soft.
I then pop into the fridge ready for later.
It freezes very well and keeps for upto 3 days in this form.

As said, you can re-heat this as a side dish to anything that needs "rice" or add the Quorn/Meat/Fish/Spices directly to it in the frying pan; because its already cooked, you are using at as fried rice basically.

Myth: I can't eat fruit if I am diabetic

So I have been asked a few times now if its ok to eat fruit.... basically the answer is YES!!

However, it has to be fresh or frozen fruit - not smoothies or juice, dried, baked or canned (with syrup); basically any fruit that is altered in any way or has ADDED sugar.  

The point is to enjoy the fruit in its natural form, this way the bulk of the fruit fills you up. 



In addition, the sugar in fruit is not treated the same in the body as the processed added sugars.  
Fruit contains a mix of natural sugars; sucrose, glucose and mainly fructose. Many people have heard that sugar is bad for you, especially if diabetic; which is true. 
However, fructose is only harmful in excess amounts and you are unlikely to eat that much in one day/sitting by eating whole fruits.

Fruit is also a good source of other nutrients such as potassium, vitamins, minerals and flavonoids; all of which can reduce blood pressure, prevent heart disease and help our cells to work, and mine need all the help they can get!!

So my daily platter and odd bit of fruit during the day as part of my meal is not harmful.
Being diabetic HAS changed the way I eat and view my food, BUT no food is off limits, they just need to be monitored and I need to stay in control. 

Understanding portion control to every element of a menu is coming slowly. My brain still wants a massive plate of comfort food, but my body is actually not allowing that any more.
I'm learning to listen to it.
