CauliRice

So this yummy "side" dish can be a basis for a meal or the side - cauliflower is versatile, cheap, easy to cook and takes up any flavour you wish to add to it.

Like all things from scratch, it takes time to prepare, but IMO its worth it, knowing you are not eating a load of chemically washed/mass produced/artificial crud.


So these are the main ingredients, but you can vary them to suit your own tastes and whats in your veg box/fridge!
Obviously the main event is the whole cauliflower!

Of course, you can just make completely cauliflower based "rice" but i like to add texture, flavour and colour with the other veg. 



You will need to chop whatever ever veg you choose into "rice" sized pieces, try to make as uniform as possible, this helps with the texture.
This is the time consuming part, but dont get too stressed about it, its YOUR "rice"!!
The more you practice, you will find the right sizing for your tastes.



Once its all chopped, I add a stock cube (in its packet form ie dont add any water!)
I like to use the Knorr ones, they come in like a jelly form, packed full of flavour and they melt really well into dishes with not much juice.

Add the pot and then mix it all together, you can season at this point if you wish, I dont use added salt in anything......

Once this is done you need to microwave it for roughly 20mins or until they are soft.
I then pop into the fridge ready for later.
It freezes very well and keeps for upto 3 days in this form.

As said, you can re-heat this as a side dish to anything that needs "rice" or add the Quorn/Meat/Fish/Spices directly to it in the frying pan; because its already cooked, you are using at as fried rice basically.
